Biography

Dave Baines is a Past President of BSF and is recognised internationally for his contributions to every aspect of flavour science having worked for a number of major flavour and food ingredient companies as a research scientist, project manager and technical director. He founded the internet bulletin Flavour Horizons and through this has organised the annual FlavourTalk Raw Materials Conference and Exhibition, bringing together companies from across Europe, USA and beyond to present their innovations to an audience of flavourists and food technologists who design the flavourings and foods of the future.

Abstract

The lecture will examine recent studies on the relationships between our senses and nutritional needs and question how they have been shaped by evolution to help us to select foods which provide us with an optimum diet. The lecture will speculate on what role flavour chemistry plays in food selection by focussing on both olfactory and gustatory cues that suggest that human nutritional intelligence is hard wired to chase flavour.

This is a hybrid University of Reading/Online event held in the Department of Chemistry, Whiteknights Campus, University of Reading, RG6 6DX.

It is part of the 2024 BSF Flavourist Training Course which is being held at the University of Reading from 7 – 24 May. The BSF has sponsored the Flavourist Course since its inception over 20 years ago and joins with the university in organising this annual lecture.

The course participants and lecturers will be attending the live presentation. Refreshments and wine are available from 6.00 pm. BSF members are encouraged to attend the presentation in Reading.
